Olivares

Olivares is located in the western sector of the province of Sevilla, belonging to the region of Aljarafe. In 1996 it had a population of 7,604 inhabitants.

The town has nowadays two areas: the urban or bonded area, which in turn is subdivided into Centre (existing Olivares in 1,900), West and South, with high density housing, and North and East, an area with some gaps undeveloped. And the area of housing estates, which adjoins the town almost its entire perimeter and which has been developed using different partial plans: Casablanca, Los Tambores, La Portada, San Benito, etc.

Olivares is located very close to the nearby town of Albaida del Aljarafe. Around the town dominated by single-family residential building, which coexists with traditional uses such as small shops on the ground floor, mills and warehouses.

The origin of the town goes back to Roman times, where the farm is located on land now occupied by the town became possible after the conquest of Andalucía at the hands of a Roman soldier, Turculus, whose successive derivations and changes over time crystallized Estercolines. In this era there have been remains of an aqueduct in the Cerro de las Cabezas that was driving the water from the late settlement of Tejada to Itálica. From the Muslim era there has remained the Tower of San Antonio which is located next to the road between the towns of Olivares and Gerena.

Olivares Gastronomy

Among the dishes we could highlight in Olivares are the chickpeas stew with cod, chicken with almonds, stew with tagardinas, fried potatoes, etc.
